Cook 2 package frozen chop spinach and drain well.
- Sauté 4 to 6 slices of
bacon till crisp, drain and remove.
- Grease
- Heat 4 Tbs. olive oil in skillet
with clove minced garlic.
- Add spinach, 1/2 tsp salt, and 1/4 tsp
pepper.
- Spread over bottom of casserole and sprinkle 2 Tbs. parmesan cheese.
- Pour 6 beaten eggs over the spinach. Crumble bacon over the top and
bake at 350 degrees for 30 minutes.
- Serve with hot bread and fresh fruit. Serves 4 to 6.
